Saturday Night – Combique with so many different wines – Part 2

 
Mick did grilled Brie on a cedar plank with a bruschetta topping or as he calls it “Briechetta”.  Mick paired this with a 2009 Chateau La Croix Chaigneau from Pomerol.
 

The nose on this wine was powerful and easy to find with aromas of green pepper, clove and black pepper.  Tasting the wine, sour cherry was the dominate flavour with some black pepper and mushroom notes.  The structure on the wine was good but it did come across slight tannic at times but this got better with the food.  It made a good pairing for the food but I think with this dish I’d lean more towards a pure Merlot vs. a blend like this one.

Tasting Note  -  A bold, complex and stately Right Bank wine showing notes of blackcurrant, plum, cherry, woodsmoke and coffee. Very nicely structured with tight fine-grained tannins surrounding a core of bright, spicy fruit en route to a dry, balanced, lingering finish. One for the cellar, this will really open up over the next 5 years or so. A fine choice for herbed beef stew. (VINTAGES panel, Aug. 2012)


The third course was Steve and Melanie’s and they did grilled flat bread with roasted corn, old cheddar and double smoked bacon.  They paired this with a Veuve Clicquot Brut Champagne.  I won’t be reviewing it here as I don’t like to do this when guests provide wine.  I will add that their course was very good and the Champagne made a very good pairing with the food.



The fourth course was Alex and Zdenka’s and Alex made a Beef Tenderloin with smoked paprika mayonnaise with a side baby Arugula salad.   He paired this with a 2008 Rodney Strong Cabernet Sauvignon.  I really liked the wine as it was very fruit forward but with more than enough body to it that it didn’t come across as a ‘fruit bomb’.  Alex did an amazing job with the beef as it was cooked to exactly medium-rare and had a wonderful flavour to it.



I made the dessert course which was raspberry and white chocolate based.  Steve and Melanie were nice enough to provide the wine which was two bottles of Ice wine Riesling from Henry of Pelham.  The Ice wine was very good and worked exceptionally well with the dessert.

 
It was a fun night but judging by the way my head feels today probably too much wine.  It was great seeing everyone again and you just can’t beat a Combique for great food dishes and even better company.

Saturday Night – Combique with so many different wines – Part 1

This past Saturday night we got together with 3 other couples and had a Combique.  Combique is our name for a dinner get together where each couple brings a course and a wine to pair with it.  These are always great for a number of reasons – no one is doing a multi-course meal for eight people on their own, as everyone is only doing one course and can focus on that, they tend to be amazing dishes and lastly as everyone is bring their own choice for wine, there is a diverse selection of wines to try throughout the night.  This dinner had white, red, sparkling and dessert wines that made an appearance.
 

The first course was my and I did an almond encrusted goat cheese on a bed of mixed green with a raspberry and poppy seed dressing. I paired this with a Reichsgraf von Kesselstatt Kabinett Riesling.
 
The nose on the Riesling was mild with aromas of musty apple, rose and caramel. Tasting the wine you will find a nice mix of smoky apple and pear with some peach notes in the background. The structure on the wine was good as there was easily enough acidity to offset the sweetness of this off-dry wine. The finish on the wine was good as it did linger around for a bit. It made a good pairing for the salad but I think it needed to be a touch sweeter to compliment the sweetness in the raspberry dressing.

Best of ComBQ

At our last ComBQ, it was suggested that we do a “Best of ComBQ” as there have been some really great dishes that people wanted to have again. Steve and Melanie were nice enough to set up an online poll so everyone could vote on their favourites. After the votes were in the menu for the evening looked like this –

The first course was Melanie’s awesome Roasted Tomato Soup with Parmesan Crisps. Melanie (and Steve) paired this with a 2009 Beringer’s Sauvignon Blanc. When I first heard the pairing I was a little doubtful about it but was surprised how good a pairing this was. I would have leaned towards a Merlot as a pairing here but the crispness of the Sauvignon Blanc made a great contrasting pairing to the richness of the soup.



The second course was mine and I did Almond crusted Goat Cheese salad with a Raspberry/Poppy seed dressing. I picked a 2007 Selbach-Oster Spätlese Riesling as my pairing. It caught a few people off guard on how sweet this wine was especially after just having a dry Sauvignon Blanc. The sweetness was needed however as anything less sweet wouldn’t have held up to the sweetness of the Raspberry dressing. It was a very good pairing with the salad and the eight of us killed two bottles of it with very little difficulty.



The third course was Mick’s famous Chicken Quesadillas. He (and Amy) picked a 2007 Gnarly Head Old Vines Zinfandel as the pairing to go with this course. Both the Chicken Quesadillas and the wine pairing were up to Mick’s usual standard of excellence.
 


The last course ended up actually being the only new dish for the night as Alex couldn’t find the original recipe he did Cuban grilled pork tenderloin sandwiches instead. He picked a 2008 Kim Crawford Pinot Noir as his pairing with the dish. This whole course was the biggest surprise of the evening for both the wine and the food. First off his original recipe was very good but the new recipe he found was even better; I can’t believe how damn good these sandwiches were. Secondly, Pinot Noir wouldn’t have been my first (Red Zin), second (Sangiovese) or even third (Rioja) choice of grape to pair with this recipe but it truly was a stellar pairing and I’d be shocked if any of the pairings I was thinking of would have been better.

For dessert we picked up a selection of baked goodies, chocolate and chocolate based cookies. For anyone having the baked goods I had a bottle of2006 Henry of Pelham Late Harvest to go with them and a 2005 Altair to pair with the chocolate. Both wines were very good.


I would like to thank Melanie, Steve, Alex, Zdenka, Mick and Amy for coming and for all the wonderful food and wine. I really enjoyed our Best of ComBQ but considering how great every ComBQ is with this group, I think every ComBQ is the ‘Best of ComBQ’ and am already looking for the next one.

Com-B-Q Baby!

We hadn’t done a Com-B-Q in awhile and we were so due for one. A Com-B-Q where we get together with three other couples and each couple is responsible for doing a course and pairing it with wine.

"Mixed green salad with apple and sharp cheddar"

Here was the menu for the night –

Alex and Zdenka – Mixed green salad with apple and sharp cheddar in a light oil dressing paired with a 2009 Kim Crawford Sauvignon Blanc

Mark and Kathy – Smoked salmon with bagel crisps, cream cheese and other assorted goodies paired with a 2006 Kendall Jackson Vintner’s Reserve Chardonnay

Mick and Amy – Diablo sliders with Zippy Sauce paired with a 2008 Yalumba "Patchwork" Shiraz

Steve and Melanie – Roast beef confit paired with a 2008 La Crema Pinot Noir

Dessert – A mango mousse paired with 2006 Henry of Pelham Late Harvest Vidal

"One of the best years ever!"

Alex’s starter salad was a great way to kick off the evening. The 2009 Kim Crawford Sauvignon Blanc he paired with caught me by surprise; we had this wine earlier in the year - http://zippysauce.blogspot.com/2010/03/saturday-night-radishes-grapefruit-and.html and quite frankly we were a little disappointed by it but this one was exceptionally good. Not sure if the bottle we first had was a little off or maybe the extra couple of months in the bottle changed the wine but Alex’s bottles were amazing, probably one of the better Kim Crawford Sauvignon Blancs I ever had.

The smoked salmon with KJ Chardonnay is one of my favourite wine and food pairings on the planet and it didn’t disappoint.

Mick’s Diablo sliders were hot and spicy and matched well with the Yalumba Shiraz.

Steve’s pairing choice of the La Crema Pinot Noir with the roast beef confit was very good. I hadn’t tried any wines from La Crema before this evening and I have to say that their Pinot Noir was very good; fruit forward with a nice balanced structure.

You may have noticed that there was masking tape over the Henry of Pelham label in the pictures, that was me poking a little fun at Zdenka. At an earlier Com-B-Q, a friend at work gave me three different home dessert wines and I served them up at this Com-B-Q. They were in plain bottles with masking tape labels. Zdenka hit them a little hard to say the least and later in the evening Zdenka suddenly stood up and looking a little green, said "Alex! Time to go now!". It was funny as in all the years I’ve known Zdenka, she is not a heavy drinker so this night was most certainly the exception to the rule.

Looking back on this Com-B-Q, I was extremely impressed at how good all the food was, blown away at how perfect all five wine pairings were and most of all feel extremely blessed to know such great people and at how enjoyable their company always is.

Com-B-Q – Part 4

4th Course – Mick and Amy – Sweet Potato Fries with Chipotle Mayo with a 2006 Sterling Vineyard “Napa Valley” Chardonnay.

"Sweet Potato Fries with Chipotle Mayo"

Mick did for the final course sweet potato fries with Chipotle mayo. The sweet potato fries are OK but what really makes this dish stand out if the Chipotle mayo. The Chipotle mayo is so good that if Mick did this recipe years earlier, this Blog might have been called Chipotle mayo instead of Zippy Sauce.

"Standard California Chardonnay"

The Sterling Chardonnay had a big nose of vanilla and lime and those same flavours carried through to the taste. The wine was a bit oaky and was sharp at times with the food pairing. I think the sweetness of the mayo at times was messing with the wine. The best way to describe this wine is infinitely forgettable as it wasn’t particularly good or bad and really didn’t stand out from a lot of other California Chardonnays.

Tasting Note - Scoring highly on the Wow! meter, it also displays some elegant nuances. Brioche, vanilla and smoky on the nose, the fruit gets into high gear by attacking the palate in velvety textured waves with tropical fruit, peach, citrus and green apple to the fore. Incredible balance and a lengthy finish portend a healthy four to five year drinking window. Pair with lobster bisque. This is a Winecurrent.com exceptional value pick. Score - 4 1/2 Stars (out of 5). (Vic Harradine, www.winecurrent.com, May 2, 2009)

The tasting notes made me laugh, especially the “Scoring highly on the Wow! meter” comment. I should send the reviewer a bottle of KJ Chardonnay or Louis Jadot “Bourgogne” - if the Sterling Chardonnay hit the Wow! meter, he will damn near piss himself with excitement over those two wines, particularly when he finds out they are $5-6 bucks cheaper a bottle!

I’d like to thank everyone who spent part of their Saturday making up the dishes for Saturday’s menu. These Com-B-Q’s are always a ton of fun and I’m already looking forward to the next one.

Com-B-Q – Part 3

3rd Course – Alex and Zdenka – Roasted Red Peppers and Bocchini on Focaccia Bread with a 2007 MacMurray Ranch Pinot Noir.

Alex did up a batch of Focaccia bread topped with roasted red peppers, Bocchini, basil, olive oil and balsamic vinegar. These were all toasted in the oven and created a great course that was flavourful and comforting at the same time.

The nose on the Pinot was huge strawberry and vanilla that had your mouth watering to try it. Unfortunately the taste experience on this wine wasn’t as good as the nose. It was very tannic and hot with flavours of cherry and raspberry running throughout. It also was a touch sharp on the finish. It wasn’t a bad wine but I think the nose of it just had you expecting so much more from it. It was an OK pairing with the food but I think if you found a less tannic Pinot that was a touch more fruit forward this pairing would be perfect.

Com-B-Q – Part 2

2nd Course – Mark and Kathy – Almond-Crusted Goat Cheese Salad with Raspberry Dressing with 2006 Mark Molitor Spätlese Riesling.

I did the salad part of the evening and picked an old favourite of mine as my choice - Almond-crusted goat cheese salad with raspberry dressing. This is a great fall/winter recipe as the warm goat cheese wheels on top of the salad make it a very comforting dish

I make it pretty much as per recipe, except I double the amount of raspberries, as I find I like the flavour the extra fruit adds to the dressing.

"A Solid Riesling"

The aromatic nose of the Mark Molitor contained peach, ripe apple and pineapple aromas. Tasting the wine you quickly noticed the increased sweetness of the Spätlese vs. the earlier Kabinett but the green apple flavour and fresh acidity really helped in balancing the wine out. There was a touch of frizzante in the mouth which also helped take away from the sweetness. It was a good pairing with the salad as that extra sweetness helped the wine in not getting lost against the sweetness of the dressing.

Com-B-Q – Part 1

We hadn’t done a Com-B-Q in awhile so last Saturday night we got together with 3 other couples for dinner. A Com-B-Q is a where each couple brings an appetizer sized course and a wine to pair with it.

1st Course - Steve and Melanie – Jalapeno Soup with 2007 Lingenfelder Kabinett Riesling

"The production line"

Melanie did up a pot of Jalapeno soup for her course. The soup strangely enough wasn’t as spicy as it sounded but did have a very nice flavour to it. It kind of reminded me of a chowder in its consistency.

The wine choice was amusing as they brought two bottles to go with soup but both were room temperature. I thought the label looked familiar and sure enough I had a bottle of it in the wine fridge already chilled so we use that one instead and put one of the remaining bottle in the freezer until we were ready for refills.

"New wine for the Top Ten Whites"

The nose on this wine was very inviting with lime, wet stone, lychee and a hint of petrol. Tasting the wine brought a smile to my face as it was nicely balanced with crisp acidity that quickly cut through the off dry sweetness of this Kabinett styled Riesling. There was a kiwi flavour that dominated the wine and the finish lingered in a good way. It was a stunning match with the soup and both bottles were quickly emptied.

The Overall 89.25 rating sneaks this wine into the Top Ten Whites group here on Zippy Sauce which this wine deserves.

Tasting Note - This '07 Kabinett displays lovely aromas of pear, pink grapefruit, citrus pulp, melon and mineral notes. Medium dry with a medium-plus body, this developing Riesling has good flavour intensity and well-balanced acidity. The mineral-packed finish is quite lengthy. Perfect with sushi or spicy Asian noodles. (VINTAGES panel, Sept. 2008).

I had forgotten how much I’d paid for this wine and when I looked it up was surprised by its $19 price point as I would have guessed this wine was in the $25-30 range by taste. The LCBO has good stock on this wine and if you like Riesling, I’d strongly recommend you pick up a couple of bottles.

Saturday Night Combique - Part 4

Fourth Course – Gorgonzola Chicken Breasts with Nutty Brown Rice and 2007 Kim Crawford Sauvignon Blanc.

Alex and Zdenka’s course was Gorgonzola chicken breasts with nutty brown rice. The wine pairing to go with this course was a 2007 Kim Crawford Sauvignon Blanc.

"Wicked Chicken!"

Alex’s found this recipe earlier in the week and decided to try it for the first time at the Combique. He is a braver man than I am as I usually do tried and true recipes for the Combique but his bravery paid off big time as the meal was great. The chicken was cooked to perfection, it was firm and moist and the Gorgonzola really brought this dish to life. His rice was very good as well as the flavour of the nuts in the dish made it seem like more than just a rice side dish.


"Gallons of Grapefruit!"

I have reviewed the Kim Crawford Sauvignon Blanc a few times on this site so I won’t go into much detail. The main element to the wine was pink grapefruit – in the aroma as well as the taste. It was a very good pairing with the dish.

We finished up the night with chocolates, chocolates cake and a bottle of Henry of Pelham Late Harvest Vidal. I have reviewed this wine before so I won’t go into it, besides by that time of the evening and the amount of wine I consumed, I was having trouble even holding a pen, never mind trying to put together coherent notes.

The evening was a blast and thanks to Mick and Amy for hosting the night; they are probably still doing dishes at this moment! Thanks to Melanie, Alex and Mick for their amazing dishes.

Saturday Night Combique - Part 3

Third Course – Spicy Chicken Wings and 2007 Seghesio Sonoma Zinfadel

Mick and Amy’s course was a 50/50 mix of spicy chicken wings and curried chicken wings served with a creamy garlic sauce. The wine was a 2007 Seghesio Sonoma Zinfadel.

"Tonight's dinner brought to by Ontario's Poultry Farmers!"

The wine was something special – big, dark and powerful. Fruit, pepper and dark chocolate on the nose. The wine had a wonderful mouth-feel that just made you want to have more. The only let down with this wine was it was better on its own that with the chicken wings. Speaking of chicken wings, they were easily up to Mick’s usual standard of excellence.

Saturday Night Combique - Part 2

Second Course – Cheddar Apple Soup and 2007 Vineland Cabernet Franc

Melanie and Steve’s course was a Cheddar and apple soup garnish with fresh parsley and served with a slice of multi-grain bread. The wine was a 2007 Vineland Cabernet Franc.

"Working the cheese in!"

The aroma of the wine was a very strong candied cherry aroma with a hint of a mossy/green aroma. The wine had a thin precise mouth-feel with a strawberry and green pepper flavours. It had a slightly acidic finish to it but overall a light to medium body wine that was very easy drinking. There was a sweetness to the wine that leads me to suspect that the sugar was a one vs. being a bone dry zero.

Melanie did a great job with the soup; the flavours combined to give the soup a hearty rich flavour. The sweetness of the apples was showing through the richness of the cheese. We talked about the idea of adding bacon to the soup to round it out a touch more. The multi-grain bread was terrific with the soup. The Cabernet Franc was a good pairing the slight sweetness of the wine playing well with the apples in the soup.

Tasting Note - Pale ruby/purple; aromas of black fruit, herbs and green pepper; light to medium-bodied, lively finish.

Serving Suggestion - Sautéed beef and pepper or vegetable risotto.

I’m not a huge fan of Canadian wines (except for dessert wines) as I stated before on this blog but for $13 a bottle this wine was quite good. A few more like this and I might be changing my opinion of VQA wines.
